Summer Guide 2025: The Ultimate Pool-Hopping Itinerary Around the Cape

There’s something ritualistic about the first plunge of a Cape summer – that magic between sunlight and water & between deadlines and burnished daylight. Locals will linger about till even after 8 p.m., and the day’s heated weariness gives way to nights of cool dips into wine and water.

From crisp wine-country light to the urban harbour reflections and salty coastal air, the summer of 2025 here is shaping up with promise: rooftops buzzing (Ennismore’s Mama Shelter, unfortunately, still buzzing with construction), the Atlantic glimmering, and hotel pools calling for you & I to float, sip, and capture the season.

This season, pool-hopping isn’t just leisure; it’s lifestyle.

Whether you’re a content creator, aspirational traveller, or globetrotter planning your summer itinerary, these pools offer cool, design-led escapes that define 2025’s hospitality trends. From urban rooftops and their branded cocktail moments, to vineyard sanctuaries and coastal hideaways for mindful breaks perhaps, here’s your ultimate itinerary for the Cape…

CITY: Rooftop Reprieves & Urban Cool

Gorgeous George, Cape Town CBD

For the city slickers and sunset seekers

One of the inner city’s most aesthetically creative boltholes continues to command an almost cult following. The rooftop pool – framed by the Gigi Rooftop restaurant and bar – feels like a private club for in-the-know locals, of which I am one who indulges there.

There’s a certain swagger to Gorgeous George – one that mirrors the teams working from the front door to the rooftop. The pool area that’s legitimately one of the most Instagrammable spots in Cape Town – all glass panels, greenery, and skyline seduction – hums from day till late night.

Come for the craft cocktails, stay for the sunset plunge, and excuse the sometimes touch-and-go waitstaff service. Even if you’re not checked in, the rooftop bar invites folks to sip, snack, and soak in that urban-boho energy you’ll want to check off your itinerary.

POOL VISIT TIP: Though primarily for guests, the rooftop pool deck and bar are accessible for sunset drinks. Arrive early to secure a lounger and a shot from above the city skyline.

Cape Grace, V&A Waterfront

Elegance reimagined under Fairmont’s touch

The storied Cape Grace reopened as a Fairmont-managed hotel in 2024, marking it as the city’s most graceful escape so far – a tranquil space overlooking the yacht-filled marina and Table Mountain. Think calm waters, plush everything, champagne service, and that signature nautical-meets-neo-Cape style at this hotel. I can attest that the sleep is sound and the offerings are all luxe!

For summer 2025, the refreshed Pool Bar promises light coastal plates and a cocktail list celebrating the Cape’s botanical heritage.

POOL VISIT TIP: Non-hotel guests are welcome to reserve a sun-bed (R750pp) with a towel and bottled water – making this a superb option for a lush afternoon by the pool, and away from the crowds.

Pullman Cape Town City Centre

Accor’s refreshed Mother City addition removes the clinical from business-style hotels and their atypical polish. Its roomy pool deck and vibrant Ghibli Rooftop Bar are open to guests and day visitors, serving as a more than decent midpoint between business and pleasure. The infinity edge design gives way to the city skyline and an urban soundtrack – ideal for squads who are chasing sunset rooftop aesthetics without bookings, and even corporate travellers extending their trip into leisure mode.

HEADS UP: The Pullman Cape Town mood is cosmopolitan minimalism and is designed for the work-leisure era. You will find a pretty interesting mix of visitors poolside, though – whether you’re there to cool down with cocktails and dipping your feet (allowed), have a business lunch, or are seeking to chill with no further plans except the next Pullman menu item.

Latitude Aparthotel, Sea Point

This aparthotel epitomises flexible living – definitely a prime pick if your summer stay needs residential style with hotel service. Its 9th-floor communal rooftop plunge pool overlooks the Atlantic, idyllically making it one of Sea Point’s most practical and truly photogenic stays.

Expect smart interiors, in-suite kitchens even I’ve put to the test, and that overall Cape Town lifestyle balance: coffee first, swim later, and sunset drinks always.

WINELANDS: Vineyard Pools & Slow Luxury

Steenberg Hotel & Spa, Constantia

Secreted away within the Constantia Valley, Steenberg Farm’s dual pools – one hidden and one scenic – serve up understated glamour with mountain serenity for both privacy seekers and sun-chasing travellers.

The private 2-bedroom villa pool that’s long and heated) remains a personal favourite: As much intimately meditative as it was cinematic & pure escapism framed by vineyards.

Majeka House, Stellenbosch

Where colour, creativity, and calm enrich the soul

Majeka House, the award-winning hotel with its sultry palette of teals and corals, remains a firm favourite for design-driven travellers who wish to languish & brag about a quality and singular stay.

The indoor-outdoor pool, moody lighting, and private pod loungers turn the outwardly traditional winelands stay into a spa-like sanctuary. For me, it always feels like a reverie – where stillness becomes a form of luxury.

POOL VISIT TIP: Book a relaxing spa treatment to enjoy pool use, OR tap into the minimum spend of R250 at the spa with a purchase. Trust me, this is quite an indulgent way to escape Stellenbosch’s midday heat – especially if you order up some MCC.

Lanzerac Hotel & Spa, Stellenbosch

Grandeur, vineyards, and gravity-defying calm

Lanzerac’s reputation precedes it time and time again. I remain enamoured with its blend of Cape Dutch architecture and unabashed luxury. The pool terrace, shaded by ancient oaks and vineyards, is the serenity you need not travel to the Dolomites for.

Even when you’re not checked in, Lanzerac’s Manor Kitchen lunch and Tasting Lounge make for an indulgent entryway into its calm – honestly, the perfect preamble to a poolside afternoon.

POOL VISIT TIP: While the main outdoor pool is guest-only (a palatial Wes Anderson-style area), day spa packages include access to hydro-facilities and a serene indoor plunge pool pretty perfect for a slow-paced afternoon retreat after sampling the Stellenbosch highlights (like Motherdough just up the road).

Grande Roche Hotel, Paarl

Slow‑luxury, vineyard views & timeless design

Tucked beneath Paarl Rock, Grande Roche feels like another dynamic introduction to the Cape winelands special – elegant with its soaring thatched roofs, sun‑drenched lawns, and a vintage‑estate ambience that doesn’t sacrifice modern comfort.

The pools remain a true anchor even since my last visit: the one framed by the food & dining spaces where visitors can order a chilled drink and continue their dip. The other is wide, stocked with cushy loungers, and mountain views. These are outdoor spaces that invite languid dips and golden‑hour portraits.

POOL VISIT TIP: Book a stay to access the estate’s full luxury: garden‑framed suites, terraces, and those absolutely cool wineland pools – ideal for anyone chasing vineyard‑quiet with style!

Bosjes, Worcester Valley

Architecture, water & creative calm

Design pilgrims know Bosjes for its iconic chapel, but its modern guest lodgings and infinity pool are equally magnetic. Framed by sculptural architecture and fynbos, when I went for a swim, I felt how the pool channels tranquillity and creative perspective – a blend of art, landscape and reflection. The estate’s heated guest-lodge pool terrace stretches into landscaped lawns – offering uninterrupted vineyard views and light perfect for quiet dips or lingering with a book.

Die Stalle Spa complements this with its hydrotherapy pool, where soothing water jets meet panoramic mountain vistas – ideal for slow-luxury wellness moments.

Whether you’re seeking a reflective morning swim, an afternoon with a quick photo to commemorate it, or an unplugged and serene evening with a glass of local wine, Bosjes’ pool experiences invite you to step into unhurried summer days.

POOL VISIT TIP: Book an overnight stay to unlock full access to both pools and the surrounding gardens. It’s a chance to let the estate’s calm, light, and artistry shape your summer healthily.

COASTAL GETAWAYS: Sun, Salt & Sophistication

The Winchester, Sea Point

Old-world glamour meets new-age cool

With its black-and-white façade and palm-framed courtyard, The Winchester is quintessentially Cape Town – half nod to nostalgia, and half perfectly current. The pool sits like a film still, encased in breezy Art Deco arches and bougainvillaea, which I always make sure to grab a snap among.

Afternoons here stretch long and luxurious, and if you’re lucky, the live jazz from Shoreditch Restaurant will drift out as you float (or sunbathe) between shade and sparkle.

POOL VISIT TIP: The pool is primarily for hotel guests, though alternate access can be linked to Shoreditch Restaurant and the hotel bar. A booking for lunch or cocktails is the cheekiest way to try and enjoy a lounger, soak in the terrace’s breezy vibe, and enjoy the pool courtyard in comfort.

Beach House Collection, Yzerfontein

For barefooted luxury and west coast cool

The Beach House Collection offers private villas – some with infinity pools that seem to merge with the Atlantic horizon. From my experiences, these are those once-in-a-lifetime places where you wake to sea-foam mist and end the day with golden hour swims.

For those not renting a villa, the Beach House Restaurant (edge of 16-Mile Beach) brings coastal Hamptons energy with dining in a rustic-lux setting right off the sea that’s tempting diners to dip. Alongside it, laid-back spots like Lula’s Food (Portuguese-Mediterranean on 61 Beach Road) and That Greek Place (Mediterranean tapas just off the main route) offer great bites a few steps from the sand.

I cannot stress enough how fun and restorative the experience in Yzerfontein is – especially if you’re swimming! It’s perfect for summer road trips where the destination is a stunning villa and its amenities (and even winter journeys sprinkled with Wim Hof-style plunges).

Mount Nelson | A Belmond Hotel, Gardens

Closing the loop back to the city with classic poolside glamour

The “Nellie” remains Cape Town’s grande dame of summer. With its darling sugar-pink façade, swaying palms and the ever-present backdrop of a World Wonder, this is the kind of city escape that feels like a living film still – graceful, cinematic, and unmistakably Cape Town.

Two heated outdoor pools frame the estate’s leisure story.

The Oasis Pool, one of the largest heated hotel pools in South Africa, hums with pleasant sophistication – and poolside service runs from October to April. By the way: a private swimming coach can even be arranged.

Across the gardens, the Cottage Pool is a secluded, over-16s sanctuary open from November to March, where dappled light filters through the trees and conversations (if you even want to have them) soften into calm.

For the first time this season, Mount Nelson has introduced private pool cabanas – a lavish all-day sanctuary for up to six guests, open to both residents and non-residents. Each cabana comes stocked with Mount Nelson Rosé, fresh fruit, soft drinks, mineral water, and sunscreen, offering the city’s most elegant excuse to spend an afternoon doing absolutely nothing. The experience (R6 000 per day) runs daily from 10h00 to 18h00, weather-permitting, and in true LVMH style has redefined Cape Town’s idea of a pool day; think Riviera indulgence wrapped in Belmond polish.

As I once wrote: “…lounging amidst palms and pink walls, where time slows and stillness wins” – and that spirit still holds true.

POOL VISIT TIP: Reserve a cabana 72 hours in advance via the concierge. Arrive to enjoy the light gilding the pink walls and palms as it’s pure postcard perfection – whether you’re after serenity or that next unforgettable shot for the grid!

This is not just an itinerary – it’s a map of moods.

The ultimate pool-hopping itinerary isn’t merely about where to stay, but how to feel in each space. These waters – storied, still, seductive – are the stage upon which your most cinematic summer can unfold.

From the harbour pool at Cape Grace to the vine‑lined ponds of Stellenbosch and the Atlantic‑horizon decks of Yzerfontein, your summer story in the Cape could be framed by water, light and design.

The pools are ready. The content is waiting. Dive in.
